This post is going to deviate from the topic I will be writing about on this site.
January 31st is a big deal for my family and I. It is the day my sister and I were brought to America in 2002. 18 years ago, I got a family. I have great parents that support me. My brother who is the same age as I have been a blessing, and I have enjoyed having someone to share the same experiences in life as we grow up. I have gotten adopted with my half-sister that I didn’t even know existed till that day. She has been my best friend and I would never want that to change. I was lucky at my age to be adopted. I do take that for granted at times, but I always remind myself of what could have happened.
To celebrate my family came together for lunch at my parents’ house. Since this is going to be a food blog, I wanted to fix something for lunch. Of course, the theme for this dish was going to be something from Russia. I decided to bake a traditional honey cake. Unfortunately, I have not figured out how to make a honey cake I remember having at the orphanage. We used to have it for birthdays so I think of it as a celebratory cake. I did some research and wanted to choose something fun to create.
The cake I chose was from Natashas Kitchen. The title was an 8-layer honey cake recipe (Medovik). Since this go around I am not doing my own I will not list the ingredient measurements and go into detail for this recipe.

This cake was easy to make, but it did take a long time.
- Orange Blossom Honey
- Sugar
- Flour
- Milk
- Unsalted Butter
- Vanilla Extract
- Baking Soda
- White Vinegar

I put Sugar, Egg Yolks and Vanilla into a bowl.
(I added a little more vanilla then called for)

Mix it all up.

In a pot on medium heat I mixed in the Milk and Flour. I cooked it until it started to get thick. Afterwards I poured it real slow into the Egg mixture while stirring constantly. I put it back on the heat until I could form little peaks. (Cover and put in Fridge to cool)

The rest of the wet ingredients went into a pot and put on medium heat. I then combined Baking Soda and Vinegar together and added it into the pot. This let the mixture double in size.(it will bubble and fizz, Use a Large Pot)

The mixture will Caramelize and Condense.

Put the Caramel Mixture in a mixing bowl and add Flour. I sifted the Flour as I put it into the bowl.

Just Keep Mixing.

Dough When Done!

Divided into 8 parts.

Pat dough into a pan for baking at 400 degrees.
(6-8 mins)

Let It Cool.

Layer Cream and Cake ontop of eachother.

Day After!

This cake was fun to make. In the future I have plans to make it again but tweak the recipe like making the first layer graham cracker or doubling the recipe to make a larger cake so I can cut off the jagged edges.
